WHAT INSPIRED YOU TO FOCUS ON SUSTAINABILITY AND REDUCING FOOD WASTE AS A CHEF?

"Food is one of my greatest passions, and feeding people brings a joy that nothing else can surpass. I often saw enormous amounts of food waste in restaurants. It was hard to watch, especially when I saw people begging for food on the side of the road on my way home after work. That's when I knew I had to make a change."

WHY DOES A PLANT-BASED DIET WORK?

“I switched to a plant-based diet almost ten years ago and immediately felt at one with this way of cooking and eating. It’s important for me to know where our food comes from. I try to eat as locally sourced and minimally processed food as possible. This ensures that the food has to travel fewer miles, which is better for the environment (and everyone else) and also for my health.”

HOW CAN EVERYONE EASILY INTEGRATE A PLANT-BASED DIET INTO THEIR LIFE?

“You can start with one meal a day or even just one meal a week—there’s no reason not to switch to a plant-based diet. Today, it’s easier than ever to replace traditional ingredients with plant-based alternatives.”

CAN YOU SHARE A PERSONAL EXPERIENCE OR STORY WHERE YOU SAW THE DIRECT IMPACT OF YOUR EFFORTS TO PROMOTE SUSTAINABILITY?

“Seeing my family implement more sustainable practices in their kitchens without me having to ask them to was an incredible moment.”

HOW DO YOU APPROACH EDUCATING PEOPLE WHO FEEL OVERWHELMED BY THE CONCEPT OF SUSTAINABILITY OR THINK THAT IT IS TOO DIFFICULT TO IMPLEMENT IN EVERYDAY LIFE?

“I think it all comes down to education. We need to inform ourselves and realize that when we buy food and then throw it away, we are wasting not only money but also time and energy. When we value our food, we also value ourselves.”

WHAT SMALL, FEASIBLE CHANGES CAN PEOPLE MAKE IN THEIR KITCHENS TO SIGNIFICANTLY REDUCE FOOD WASTE?

“Use the food you already have before buying new stuff. If ingredients have been sitting unused in your cupboard for six months, move them to the front and find ways to incorporate them into your recipes. I think organization is a big key to wasting less.”
